I'm not sure how to set up

I'm not sure how to set up the modem for dial-up connection but if you're using a lan cable, no setup required, it automatically detects the connection.

Dual-booting with XP, I use a windows program called WUBI - google it - its like installing a program in windows then it'll guide you through the rest of setting up / installing Ubuntu, and when you don't wanna use Ubuntu anymore, you can just uninstall the WUBI program from XP's Add/Remove programs.

Connecting to the Internet

You're still using 5.1? That ubuntu version is not supported anymore. I suggest you try using ubuntu feisty, the latest version.

What is your internet connection? is it dial up (as ur post suggests)? Can you describe your pc to us? so we can recommend the right Ubuntu for you.

I'm not on my ubuntu box right now. But i will post later where you can find the dialer.

Indeed Ubuntu has a nice desktop. But if your rig will allow you can install compiz or beryl which are really cool compositing desktops.
